Mal is a completely different man in bed, Simon has found. He can be whatever he wants to be, whatever Simon needs him to be -- rough and quick and almost punishing, slow and tender and loving, or some happy medium between the two. It's the one thing about their relationship that isn't fiendishly complicated. The rest of the time they dodge and evade feelings, hide between impersonal exchanges -- 'captain' and 'doc', not Mal and Simon.
It's easier, in some ways, to keep their sex life apart from the rest of their lives, but that doesn't mean it doesn't hurt, sometimes, to keep it all separate like that. Sometimes, though, it's easier. When the captain shouts in frustration at the doctor who is being overly fussy about cleaning out a wound, it isn't Mal shouting at his lover. It makes the distinction clear.
Sometimes, of course, the fine line blurs. Simon will look up from his food and find Mal watching him with tenderness in his eyes, and he'll smile at him, and provoke a smile in return.
